Gone nuts!

In my first blog post I want to share one of my ultimate favourite pancake recipe. I like to mix different kind of flours and try new combinations to find exciting flavours. Nut flours give lots of options to variate with your pancake batter. With these yummy nutty pancakes I highly recommend my favourite cocktail: xanté with lime and soda. Heaven in mouth!

TOTALLY NUTTY PANCAKES:

Serves 4

2 dl all-purpose flours
1 dl almond flour
1 dl haselnut flour
3 tbsp sugar
1/2 tsp salt
3 dl milk
2 eggs
2 tsp vanilla extract
2 tbsp olive oil
1 tbsp melted butter

Stir all the dry ingredients (flours, sugar, salt, vanilla).
Add milk, eggs, olive oil and melted butter.
Stir until flour is very well moistened.

HOT CARAMEL SAUCE:

2 dl heavy cream
2 dl brown sugar
1 tsp vanilla extract
few tbsp butter

Add heavy cream, brown sugar and salt to basic saucepan.
Be sure to stir all the time. Add butter and continue stirring.
Cook until caramel sauce gets thicker. Add vanilla. Done!

MY FAVORITE DRINK:

4-10 cl xanté (depends how thirsty you are…)
few splashes soda
lime
some ice

Cut limes. Add ice. Pour some xanté. Add soda. DRINK.
