French pancake for lazy girls

We all know that feeling when you have some major cravings for some heavenly good dessert but you don’t have time nor energy. Well let me introduce you French classic dessert clafoutis which happens to be my life-saving dessert. The original clafoutis is made with cherries but other stone fruits work as well too. This time I made my clafoutis filled with peaches and raspberries – can’t go wrong with this combo.

PEACH & RASPBERRY CLAFOUTIS:

Serves 4 to 6

butter for greasing
icing sugar for dusting

fruit mix:
4 medium size peaches
2 dl fresh raspberries
1 fresh lemon
2 tbsp sugar

batter:
1 tbsp butter
2 large eggs
1 dl milk
1 dl heavy cream
1/2 dl sugar
2 tsp vanilla extract
1 dl all purpose flours
1/2 tsp salt

Preheat the oven to 180C and grease an oven-safe frying pan with softened butter. Mix together sliced peaches, raspberries, lemon juice and sugar. Set the fruit mix around the pan. Melt the butter and whisk together eggs, sugar and vanilla extract until the mixture becomes creamy. Add the flour and whisk until batter is smooth enough. Gently add milk, cream, butter and salt. Pour the batter into frying pan over the fruit mix. Bake in the oven 30 to 35 minutes. Let cool for 10 minutes if you can… Cut into wedges, dust with icing sugar and serve warm with ice cream.
