WAFFLE WEDNESDAY ♡ Perfect Protein Waffles

It is the second Waffle Wednesday I am gonna celebrate and this time with some healthy version of waffles. So far my blog has shown different kind of recipes about pancakes but this is my first post about healthier pancakes. Few years ago I got really interested in creating and testing healthier versions about all kind of dessert. That time I was graduated as a personal trainer and I wanted my clients (and myself too haha) to be able to enjoy some sweet treats that were more suitable for their quite strict eating plans. Healthy pancakes and waffles are perfect breakfast for a change if you get easily bored for your regular breakfast. Few weeks ago I had a lazy Sunday morning while I was cat baby sitting an adorable kitten Sanni. I tried this protein waffle recipe for the first time and I was so positive surprised I decided to share it to you. Lil kitten also approved!

Perfect Protein Waffles

Serves 4

2 eggs
2 1/2 dl almond milk
1 scoop vanilla protein powder
1 1/2 dl oat flour
1 1/2 dl gluten free all-purpose flour
1 tsp baking powder
hint of salt
cinnamon
vanilla extract
coconut oil for baking

Mix all the dry ingredients in a baking bowl. Add eggs and almond milk and whisk properly. You can use also a basic blender to make mixture quickly. Heat the waffle iron and add some coconut oil. Pour waffle mixture into hot waffle iron and wait few minutes that waffle is ready.

Healthy Raspberry Sauce

2 1/2 dl raspberries
3 tbsp coconut manna
1 tbsp honey

Heat fresh or frozen raspberries with coconut manna. When mixture boils add honey or another sweetener. Serve waffles with raspberry sauce and coconut flakes. Enjoy!
