Dreamy & Creamy Ricotta Pancakes

This recipe is one of my faves in a while. Like usually – great flavours are found by mixing fresh and more heavy tastes together. Cheese fits very well with pancakes and give them texture and creamy flavour. Ricotta and mascarpone are both well suited ingredients to put into pancake mixture. Here I went very Italian: I made some creamy ricotta pancakes and served them with Limoncello foam.

RICOTTA PANCAKES:

3,5 dl all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
3 1/2 tbsp sugar
1/2 tsp salt
1/3 tsp vanilla extract
2 tbsp melted butter
2,5 dl heavy milk
1,8 dl ricotta cheese
2 large eggs

Put all the dry ingredients in to a large bowl and whisk them properly together. Then whisk in a separate bowl together heavy milk, ricotta cheese, eggs and melted butter. Pour the ricotta mixture into the flour until the batter is smooth and creamy. Heat an oiled frying pan over medium high heat. Brown on both sides and serve hot with limoncello foam.

LIMONCELLO FOAM:

2 dl creme fraiche
2 dl cream
2 tsp vanilla extract
2 tbsp sugar
2-3 tbsp Limoncello (I accidentally put 5 tbsp…oops)

First make fluffy whipped cream in a large baking bowl. Then mix in cream fraiche, vanilla extract and sugar. Finally add Limoncello into mixture and mix gently. Pour foam as a topping for pancakes and serve with lemon zest.
